Criteria for selecting the extraction system
The correct industrial vacuum-cleaner configuration must be defined by analysing three fundamental areas of the cleaning process:
1. Nature and Temperature of the Residue
Assessment of the material to be collected: flour, sugar, fine dust, crumbs, crusts, dried dough, damp residues or material that is still warm from inside the oven.
2. Cleaning and Filtration Requirements
Verification of cleaning frequency, quantity generated, area to be cleaned, hose length, filtration class and any requirement for automatic filter cleaning.
3. Safety, Hygiene and ATEX Risk
Assessment of food-dust combustibility, area classification, HACCP procedures, allergen management and the thermal compatibility of the entire configuration.
Ovens and bakeries generate different types of residue
Flour, sugar and fine food dust: Weighing, dosing, transfer, mixing, dusting and packaging operations can generate lightweight dust prone to caking. Flour, semolina, starch, icing sugar, cocoa and food preparations tend to settle on surfaces and can rapidly clog conventional filters. For frequent cleaning, an adequate filter surface area and cleaning systems capable of maintaining more stable extraction performance should be used.
Crumbs, breadcrumbs and solid residues: Cutting, handling, baking and packaging generate crumbs, bread fragments, seeds, cereals, crusts, dried-dough residues and small solid waste. These materials can be collected from floors, tables, machinery, conveyor belts and areas beneath production lines using industrial vacuum cleaners with vacuum pressure and collection capacity proportionate to the volume generated.
Adhering residues or residues inside ovens: Baked flour, crusts, sugar, grease, crumbs and carbonised residues may adhere to the oven floor, walls, trays or baking chambers. When the material is not loose, vacuum cleaning must be combined with mechanical action using lances, brushes or compatible accessories. The actual residue temperature at the time of cleaning must be verified before starting the industrial vacuum cleaner.
IMPORTANT NOTICE: The presence of a filter with Nomex properties and high-temperature resistance does not permit the collection of flames, embers, incandescent residues or burning materials. The filter temperature rating does not automatically correspond to the maximum temperature permitted for the complete machine. The hose, connections, seals, accessories, container, extracted-air temperature and duration of the operation must also be verified. The oven must be switched off and the material must be in a condition compatible with the configuration being used.
Applications in bakeries and food-production departments
Floors, work surfaces and shelving
The industrial vacuum cleaner allows flour, crumbs, seeds, dust and small residues deposited on floors, tables, shelves, racking and production structures to be collected. Vacuum cleaning avoids resuspending the material using brooms or compressed air and allows operators to reach corners, gaps and difficult-to-access areas.
Mixers, hoppers and production lines
Flour, semolina and dry ingredients can accumulate around loading openings, beneath mixers, in dosing areas and along conveying systems. Technology classification: Industrial Vacuum Cleaner, Dust Collector or Centralised System
To identify the most appropriate system, FEVI distinguishes three principal technologies:
- Industrial Vacuum Cleaner (High Vacuum): The appropriate solution for collecting flour, crumbs, dust and residues already deposited on floors, machinery and surfaces. It uses relatively small-diameter hoses and is also the technology normally used for localised cleaning inside ovens through a dedicated thermal configuration.
- Dust Collector (High Airflow / Low Vacuum): Suitable when dust becomes airborne during dosing, transfer, mixing, sieving or ingredient loading. It is connected to hoods, enclosures, hoppers or capture points and moves a greater volume of air than a conventional industrial vacuum cleaner.
- Centralised System: The solution to consider when several departments, floors or workstations must be served. It includes a central vacuum unit, piping network, distributed extraction points and a collection system sized according to simultaneous use, line length and the characteristics of the food dust.
